Ah yes, the smaller they are = the thinner they are = and sometimes they DO break, so you start over or "make lemonade out of lemons"!

Ostrich eggs are generally 18" top around to the top again, and 16" around the middle.  I like to use 20" eggs for the carriage eggs when I can find them, and the size does vary by a few inches both ways.  They are about 1/16" thick, take 4 hours to hardboil and will make an omlette for 8 people - or so I've read; I don't have a pot BIGGGGG enough to do either!  This picture chart is done by my friend, Kelly, who has her very own petting zoo/animal sanctuary in Marcellus, Michigan.  These are a SMALL representation of some of her feathered critters.  Thanks, Kel!
